I Forage Off the Land
No matter where you live in the world it’s always good to accumulate what you can off your surroundings. Through my studies I know that people evolve differently based on what they eat, rather it’s growing up in Mexico with garlic, corn, peppers, spices, and herb, or growing up in Alaska off fish, game, berries, and some rhubarb.
I’ve traveled some in my life, one thing I’ve always focused on is what’s abundant and available. I feel that in order to give the best experience, I need to harvest my own ingredients so I have a story to tell and connections with the food. I swear that if I pick my own berries or hunt my own proteins that there is a certain flavor in there that you can’t find in any grocery store.

My pops is a dedicated and passionate captain, he spends all his energy on trying to take people out fishing, shrimping and hunting. His off time consist of maintaining his boat. My dad has taught me more About fishing, the ocean and different species than I could ever imagine I could sit and tell you story after story and I’d be more than happy to if you hire me.

I Make My Own
This is my favorite topic… I constantly get asked. “How do you come up with a recipe?” I try to explain that I find an essential ingredient that I want to focus on and I go from there. The tongue can taste 5 elements so I try to fill those tastes with tradition, excitement, texture, temperature, color, and nutrients.
Another focus of mine is being primitive and utilizing “lost” old world techniques that were established for a reason. I like to constantly think about preparing for winter with the preservation of food so I can feed my family, friends, and anybody else that’s open for an experience.
